With regard to your first question, I am a pianist and if you put the right
hand music stems up and put the left hand music on the same staff with stems
down by creating a second voice with alt 2, a pianist would often naturally
play the stems down notes with their left hand, particularly if the bottom
staff is blank.
If you want to make absolutely sure, attach text to the first note of the
passage under the left hand music and write as text:
L.H. with the L and H capital letters, or
m.g. with the m and g in lower case letters, or
m.s. with the m and s in lower case letters
and put the text in parentheses, such as (L. H.)
The first is the English abbreviation for left hand, the second is the French
abbreviation, the third is the Italian abbreviation - any of these will be
understood by pianists.
About your second question have you tried creating a cross staff beam which
creates a horizontal beam inbetween the two staffs of the piano music, with the
lower staff notes stems up to the beam and the upper staff notes stems going
down to the same beam. Maybe if you do this first, you can then create
successfully one long slur.
I think the cross-staff beam is perhaps under the Notes menu.

A: When there's a passage which starts in one hand and continues in
another and needs to be slurd, how is it possible to select both
staves to put the slur?
B: Such an issue as the previous for writing tremolo between 2 hands.
Here there are 2 issues, selecting staves and putting beams of tremolo
which have to be appeared between the staves if I'm not wrong.
