Sorry. When I press Windows, I get the start screen. When I press it again,
the start screen closes and I return to the app I was using: this email for
example. What special setting is it under?

Your Start Up is a list of shortcuts to favoured items.
You find it by pressing the Windows key which takes you to the start menu
then if you press it again you go to the start up
