This is a bit of a complex subject, ie., there are quite a few
interactions taking place. By default, WordPress puts every page you
create in the menu. You can override what WP does by creating your own
menu under 'Appearance' > 'Menus". Having said that, much is dependant
on the particular theme you're using. Some themes support a horizontal
menu, others both a horizontal & vertical menu. So you'll need to
determine what your theme permits.
