Hey Cristy, no need to use the bigger Outlook package if Outlook Express is
all you need. I found that program for you. The version has upgraded much
since I last used it. The program and current version is SecureOutlook
v2.0.0. The website is:

After you install it, the program will create a shortcut in your programs
folder called SecureOutlook (obviously, right?). Replace all your Outlook
Express shortcuts with the shortcuts created by this app... the
SecureOutlook shortcut. From now on, you always start OE with this link. As
long as you start it with this link, closing OE automatically logs you out.
So, if your mom gets curious and experimental and decides to use the regular
OE shortcut, it will basically unsecure her own account. But yours, which
will now always be started with this link, will be secure. In general,
though, once you make the shortcut changes, and name the shortcut Outlook
Express (instead of the default SecureOutlook), and maybe change the icon if
you really want to mask it, your mom will never know the difference.

So.. to summarize... download the app, install it, and start using it. No
need for any configuration whatsoever.

oh, okay, well I think I also have outlook on here.  Thanks Troth.  I guess 
I just need to password protect my email since my mom just learned how to 
switch users and log into email ;0
