I found this online.  See if this works.  It was for Office 2003, but 
maybe it will be the same for 2007.

When you open a new document click on the 'Format' menu and choose 
'Columns'. Click on 'One' and click 'OK'. Then click on the 'File' menu 
and choose 'Page Setup' and click on 'Portrait'. When the page changes 
to 'Portrait' (in the pre-view), click on 'Default' and then click on 
'OK'. Your new documents should now open in Portrait layout.
