Hi Julia,

Hang in there.  Glad you have decent deliveries who feed you well.

We are in a semi lockdown here too and feeling the stress of increasing
cases of variants affecting younger people, even toddlers.

All kids are now doing Home Based Learning in the horridest of hot humid
weather here.
No more dining at restaurants.  Only takeaways or deliveries allowed.
But markets and supermarkets remain open so we still can get our fresh
food.
Just grateful that all of us at home are healthy (and mostly vaccinated.)

I  butterflied a pork loin roast.
Coated the inside with something I made up.
Raspberry-jalapeño jam, chipotle pepper, vinegar, cumin a bit oregano..

Rubbed inside. Layered in some fresh green garlic ( looks like a big green
onion) finely chopped.

I rolled it back up jellyroll style into a roast...tied it up.

I cooked it on the grill, and glazed at the end with remaining jam
concoction.

It turned out very well!!

To go with it, I had a small baked sweet potato with butter and sour
cream, and a fresh lightly steamed corn on the cob...both from my veggie
box.
