Yep, these days, roasting is my sole method for cooking cauliflower for the
most part.
Juat adds flavor.

It’s a pet hate of mine, the way many low carb recipe developers call their
cauliflower cheese recipes 'low carb mac and cheese'. It just isn’t. It’s
cauliflower cheese! *sniff*
A very simple and very tasty way to dress up cauli (and any other veg added
in with it if you like) is to mix a tub of sour cream with lots of cheese
(cheddar is fine!) and a tsp or so of Dijon mustard, pour over the veg (about
half a kg but whatever works), and bake. Oodles of flavour with very little
effort.
