Yes, I use the Nata Fresca. The mascarpone sounds good too. No problem
buying mascarpone here. I always add Nata Fresca to my mashed potatoes. I
don’t drink milk so had none when I did mash to go with my lambs liver and
onions used the Nata Fresca and it was yummy.

I like the sour cream idea. It is hard to find sour cream here ( only
Iceland sells it but due Brexit a lot of goods delayed at customs. The
expat Brits moaning and whinging cos they can’t get their sausage rolls and
sausages🤔😜 so Iceland has been sourcing food from Ireland as they still in
the EU). I substitute with nata Fresca which is like creme fraiche

It’s a pet hate of mine, the way many low carb recipe developers call their
cauliflower cheese recipes 'low carb mac and cheese'. It just isn’t. It’s
cauliflower cheese! *sniff*
A very simple and very tasty way to dress up cauli (and any other veg added
in with it if you like) is to mix a tub of sour cream with lots of cheese
(cheddar is fine!) and a tsp or so of Dijon mustard, pour over the veg
(about half a kg but whatever works), and bake. Oodles of flavour with very
little effort.
