Sam, our queen-right hives are only taking in a little pollen too. I think
the colonies were not laying much in the very dry weather so they don't NEED
much pollen right now (to feed the young). Also, a new colony may be
concentrating on, say, constructing comb if it isn't prioritising brood
laying right now.

I am not keen to open the hive just yet. I will have to be patience and
keep looking carefully. It could be the type of flowers they visited. We
have many lime trees and they are in full bloom now in this part of South
Oxford.

Was your swarm actually a cast? If so then it's possible that the new
queen hasn't quite come into laying yet. This could be imminent or could
be a little delayed, and 2-3 weeks is not untypical.
Virgin queens may not mate immediately, depending on the weather, but now
it has turned warmer again then she has every opportunity to do so.
Alternatively, perhaps there is pollen coming in but the amount is so
little that you have missed it thus far. As it could be that the queen is
laying but at a low rate as they don't want to build up too quickly during
the June gap.
In either event, I would not be concerned on this timescale and just keep
watching and waiting.
