Thanks, Marty, this looks interesting. I don't do pancakes, but maybe it would make a good oven pancake, though. Hmmm.

Protein Powered Raspberry Vanilla Pancakes

1 tsp coconut yogurt
½ tsp baking soda
¾ c. Pamela's Pancake Mix or Gluten Free Baking Flour
¼ c. Enerhealth's Vegan Protein Powder
½ c. water
¼ c. almond milk
¼ tsp cinnamon powder
¼ tsp. vanilla extract
¼ c. fresh or frozen raspberries
1 tsp. coconut oil

Mix the baking soda into the yogurt in the base of a mixing bowl. Allow to rest for 3-5 minutes. Add the pancake mix or baking flour, and stir well. Mix in the remaining Protein Powder, water, almond milk, cinnamon, and vanilla extract. Melt the coconut oil in a medium sized pan or electric frying pan. When melted pour the oil into the bowl, leaving the remaining behind for frying the pancakes. Gently fold in the raspberries.
Pour a spoonful of the mixture into the frying pan and allow the pancakes to toast on each side over medium heat. Serve on warmed plates with additional yogurt,
yogurt, cinnamon and syrup.
