In Wheeler and Clark's Photographic Guide to North American Raptors it says
that the Cooper's Hawk juveniles eyes are straw colored and that
Sharp-shinned Hawks juvenile eyes are yellow. I don't see any difference in
his pictures.

I always assumed all imm. Accipiters had a yellow iris. Anyone else
have knowledge of this?

Just tossing this out there but looking at Wheeler's book on Raptors of
Western North America, he points out that the iris color for immature
sharp-shinned hawks is a medium yellow iris while immature Cooper's have a
pale gray iris. In the photo provided,
the iris appears to be a yellow color which according to Wheeler would
make it a sharp-shinned hawk.
