I don't think there is any way (including macro/VBA) to change the default of the auto filter drop down. Actually, it's not really a default, it's just the top item in the list, below the sort options. I suspect it's hard-coded this way. You can, of course, use VBA to set actual auto filter settings on various columns, but I don't think this is what you are looking for.
