But what you could do is create your irregular shape and add a borderless
text box over the top as an additional layer, group the two objects and
make sure the text doesn't expand beyond the edges of the irregular shape
"holder".  At least that way if the text needs to be edited at all you
don't have to recreate the JPEG in a photo program.

Would that work for you?

I agree, I reckon you'd have to do it in Photoshop or similar, save it as
a JPEG and then insert that into Word

There's no way to do this in Office...including Publisher as far as I have
ever seen.

On the drawing toolbar there are autoshapes available under
the flowcharting shapes.  You can draw the shape and right-mouse click on
the shape and select add text.

This is true. However ...

The text is confined to a rectangular area within the overall shape.

You cannot "pour" the text into the shape and have it conform to the
shape.
