Assuming a spectral sensitivity over the same colour range as for colour neg/slide film, for a black and white film.
I don't see that there should be any great difference in the result from a converted or from an unfiltered shot-in-BW image.
Fact is, most of the "intentional" BW shots have been taken with some kind of filter to change the tonal range or contrast right from the outset.
I see the conversion from a well exposed/true coloured neg or slide as a more "honest" basis for BW.

These were just converted by dragging a folder of jpegs to a droplet. I still have the RAW that I haven't even looked at yet, much less tried to process.

I've heard this but I don't agree. I don't think there's any difference in seeing a scene in color and photographing it in black and white and seeing a photo in color and converting it to black and white. I'm not thinking as I take the photo, "Well, I've got black and white film in here so I'll photograph this scene this way". I'm only looking at the people and trying to capture an emotion. I don't usually pay any attention to the technical details as I'm taking the photo - only to see that I've got enough light to hold the camera steady.
