I believe both the JSAY and the Naturally Speaking manuals are in PDF format.
Your client should be able to share that with you to help her/him install and
become proficient on the products.

JAWS and Dragon Naturally Speaking are completely compatible.
If you buy the JSAY package, you get a ton of scripts such that verbal commands
not only control Naturally Speaking, but also JAWS itself.
JSAY is a pretty cool package, though the installation in a highly secure and
restricted corporate environment can be a problem.
I don't have JSAY installed at the moment, and I'm behind on my upgrades. JSAY
is a little expensive.
Actually, unless you really want to take command of your computer by voice, you
really don't need JSAY. Dragon Naturally Speaking and JAWS work fine together.
The big challenges are:
1. Getting the settings right (JSAY has a list of about 15 setting changes);
and
2. Doing the training (JSAY does a nice job of parsing the training materials).
With a little sighted assistance, however, you can do the training without
JSAY, and you don't actually need sighted assistance if you are really, really
patient and don't mind the headache of heavy duty short-term memorization.
