Another alternative is to press Alt + Enter or Alt + P while creating the
message. Each of these opens a dialogue with focus on the importance
control. DownArrow to High and then press Enter to close the dialogue and
return to the message.

I usual use ALT + F to get me in the file menu, then press CTRL + TAB which
moves me on to that toolbar with the importance buttons on, then I think I
use arrow keys or tab to move between the buttons.
