May I add one comment to Dean's instruction? It might help to know that
this is not a Jaws command, but a Word command. A lot of Jaws users are
often not sure which functions at their disposal are things to do with the
application, and which are special jaws functions. I think it's helpful to
distinguish between one and the other.

the keystroke is alt-shift-d. You go into the insert menu, date and
time, alt-i, t, to set the date format.
