It was actually the other way round mostly, the WinXP machines
apparently not processing the network requests correctly. Can also be a
DNS issue (the WinXP machine not resolving correctly) - for more info,
have a look at http://www.smallbizserver.net if you get the time!

How is it that a Win2K Server as a domain controller would cuase the
Windows XP machine to go slow?
I've updated the Win2K Server to SP4... I'm obviously able to send email
still ;-) so that's a good thing.
These machines are fully updated.
We have another server that runs Vantage, by Epicor, and they told us
for it to run faster that we should
Go from 100MB full duplex to 100MB half duplex and that should help our
slow problem with it's software. (I don't know why, I don't believe
them... But maybe their software is designed weird?)
Is it possible I would need to do this to the Exchange server?
