In my experience as a braille reader and a transcriber, the bestbraille menus contain a minimum of symbols. When reading a menu there is usually a time limit for the reading. The person wants to quickly find the names of the menu items, the prices, and the descriptions (if the descriptions are of a meaningful content. Emphasizers such as tabs or dot leaders which set off these things and make them clear should be chosen rather than italics which are among the less decipherable of braille symbols.
