Unfortunately, you need a sited person to read the instrument names out of
the manual. You also need to know what the bank select method is, and whether
the patches are listed from 0-99, 1-128 or -0127.

Yes, you can. You just have to get a sited assistant to help you create
a custom set of instrument definitions. Did you try looking on Cakewalk's site
for definitions?
