But I can't work out which server is causing the delay; is it possible to tell
from these headers?

No.  The email (eventually) passed from one server: turing.freelists.org
to another: server1.xencentrichosting.uk

All sorts of things could have delayed that. Either server may have been
inoperative for a while (having a New Year rest?) or overloaded or any number
of things.

The only way you can find out is to ask the tech support people at both
organisations if they had problems, and if you're lucky they'll dig out of
their server logs details of what happened each time the transfer was
attempted - which might have been many times before it actually worked.
