JAWS usually says em-dash.  See how I wrote that. You can confirm this by
pressing insert-4, which brings up a list of non-typable characters that
JAWS can insert for you.  If you press the letter e a few times to go
through the list of characters beginning with an e you will find em-dash.
It is called that because a hyphen, or single dash, is only as wide as the
letter N.  The short dash is sometimes even called en-dash.  The double or
long dash is called em-dash because it is as wide as the letter m.  If you
aren't sure what the character is you can hit the 5 on the num-pad three
times very quickly when on the character.  The ANSI number for em-dash seems
to be 151.
