I've had issues with this as well. If I duplicate your example I get
exactly the same result. However I've just repeated the exercise after
re-booting the ARMX6 and get a different result - copied text written in
StrongED can be pasted into a new SED document. In other words the
original text from Windows 10, Notepad is overwritten.
Incidentally did you have UniContrl on iconbar. If so I don't think it's
necessary because UniServerFS is run automatically on boot-up.
I've just performed the same procedure on a Raspberry Pi but and it
works as it should.
I think this is a fluke because I've spent hours trying to get a
reliable text transfer between Windows and RISC OS without success using
UniServerFS. Luckily the printer side seems reliable.
I've largely given up this method of transferring text information
in this way and although not as neat use LanMan98 which is reliable.
