Brian,

I had customers requesting the same thing for students that had to train
a developer class. As you can understand that is a tricky thing to do
since they have enough rights to cause harm on the real server. The
VMWare gave them the opportunity to run a virtual server within a
session with admin rights in their virtual environment but not within
the real server.

Well at least there is a valid reason for doing it in those
environments.

Can anyone think of a reason why/how you would utilize VMWare in an
existing Citrix environment?

I have a potential customer that is looking for someone to install
VMWare into an existing Citrix server environment.  Although it's
tempting, unless I'm missing something, I cannot think of a reason why I
should do this?
