Sounds like maybe he's not getting logged off the first server cleanly. He logs off server two cleanly, so his roaming profile gets updated from the cached profile on server two. Then, after a period of inactivity, server one logs him off, and his roaming profile gets overwritten with the cached profile from server one. Could that be?
