Or use the time based load balancing feature - we call it a "spindown". Create a load balancer that is only available for a certain time (like for one hour on Sunday) - this allows users to reconnect to their disconnected sessions if they need to on the server in spindown - but it won't accept any new users. Change logon /disable will make the users get a message that the logins are disabled if they hit that server. If you have xpe you can set the load balancing level extra high to make the server appear busy and logins won't go to it.
