Dave or anyone, do you know if older versions of Ghost will
do this to at least some extent?  I have some, but no manuals
for them.

Get Norton Ghost ver 2001 or newer it will allow you to make
an image of
your hard drive directly to your cd-burner it will also span
cd if need be.
It works on networks also.
