There is no problem with the delivery of full horizontal resolution with h.264, which has profiles to support 2560 x 1080. Can't do it with MPEG-2, but it is easy to scale 1920 x 810 (letterboxed 2.37:1) up to 2560 x 1080. This is probably what is happening today.

As with ANY digital compression algorithm, it is possible to use anamorphic squeezes to conserve emission bandwidth. In theory it should be possible to do the full 2560 x 1080 encoding with h.264 on Blu-Ray today.
