The JAWS command to close the office assistant is control+insert+f4.  If
the office assistant was successfully closed you will hear this with
JAWS.

Hi Joy,
This is good for at least Word 2000
Go into the help menu, in Word, and arrow to the office assistant
If it says, show the office assistant, then it is already disabled.
If it says, hide the office assistant, press enter on that.
You are done.
