Judith,
Since you wrote that, "The extension is PDF and it is read very well in that
mode" you can simply highlight the text in each PDF document and copy it by
pressing control + C, and then switch to the word processing program of your
choice and paste the copied text into a new document, which you can then
save to your hard drive.
