Exim - MTA/SMTP listener and client.
Dovecot - POP & IMAP server
Postfix - MTA/SMTP listener and client
Sendmail - MTA/SMTP listener and client
Squirrelmail - Web-based mail client (requires Apache)
Courier - all of the above and them some more.
I've seen a combination of them being suggested. I for one want to set up a
local mailserver, where ease of installation, maintenance and use have a
higher priority over security.
Go for Courier. Easy to setup, includes all the bits and pieces you
need hence zero interoperability hassles, supports virtual mailboxes
out of the box with a variety of authentication schemes and designed
from grounds-up in a secure and modular fashion.
