If I'm doing something and I'm recording by playing in to something and the
pece changed from 4/4 to 3+3+2+2/8, how would I indicate that while playing?
would have to stop and do some adjustments?

Caglar, Nicaise has given you some very good tips here. Another tool that
can be quite helpful at the right time is to use Sibelius' FlexiTime sequencer.
Run Sibelius and set up your new score. Press CONTROL+SHIFT+F to start
recording to a metronomic click. Experiment a bit and you may find it speeds
up your work.
