yes, you'll have to adjust the time signature to I believe 10/8, or
maybe 6/4? Usually the 3+2 type notation is written somewhere on
the score in English, like in a written instruction to the rhythm
section on how to group the odd time.

Caglar, Nicaise has given you some very good tips here. Another tool that can be quite helpful at the right time is to use Sibelius' FlexiTime sequencer. Run Sibelius and set up your new score. Press CONTROL+SHIFT+F to start recording to a metronomic click. Experiment a bit and you may find it speeds up your work.
