I used to have a login script which trashed the start menu and desktop icons, 
depending on which groups they were in.

Would that help?

All I want to do is make certain applications available to students as the 
logon on thier desktop and startup menu. Nothing flash, it must have been my 
use of the word Publish. We have installed software for graphics and media, and 
that is all we want the kids to see.

We use a single mandatory profile and use Citrix to publish the apps via Web 
interface. So all they need is a browser and the Citrix client. Alternatively, 
you could use terminal services to publish apps if it is 2008 version. (you 
will have to purchase TS Cals) and then set up a 2008 TSGateway server and let 
them access the apps via RemoteApp. 
 
If you want to just control the apps Symantec/Altiris has SVS and VMWare now 
has ThinApp that you could package the apps and stream them out to the users 
desktop.
