We need to clarify something:
You just want to change de LANGUAGE? or you need to change the COLLATION of
your database?
If you are having problems with referential integrity creation, probably
your problem is with the COLLATION language.
Both things can be changed:
Language -> just like Nick explain you
Collate -> Use the COLLATE instruction.

I've just found out that the default language on one of my MSSQL 2000 boxes
is wrong. It was left as US (as was the server it lives on) when it was
installed and an application vendor is claiming this as the reason for his
software giving trouble. Can anyone point me towards a resource with
step-by-step instructions for changing the system default language to UK
English? I've changed the Win2K server settings but MSSQL still thinks it's
american.
