So let me explain a bit. If you are recording you really want to have
an input signal below minus 6. This is because this leaves with you
with room to spare if someone starts talking loud for some reason. If
they reach 0 DB then you will have clipping going on. And clipping
doesn't sound good to the ears.
Many people say to bring it up to minus 6 and for a voice recording
that may be fine. But for other loud instruments like drums it's
better to go down to minus 10 DB or so.
it makes life much easier because then you don't have to worry about
getting any kind of clipping.

you on a PC using JAWS and the Snowman scripts for SF? If so, then you can
check the level going into SF with the F11 or F12 keys, you can also
automatically check for clipping by double pressing the F12 key which turns
on detect clipping. You turn it off again by the same keystroke.

During recording, you really need some headroom, -6 to -12 dB levels
are fine even -18 is OK. You can then bring those levels up
afterwards. I assume you'll be recording at at least 44.1kHz at 24bit?
What do you mean by "Since I want the recordings to be balanced in
volume"?
Some of this is down to the voice and how good they are. A
non-professional with little understanding of mic technique can be
difficult to record as they will move around and pull off the mic etc.
If you're using a professional voice then you'll have less trouble.
My advice would be to try and do some test recordings prior to the
job. You can then get a feel for mic positioning and the type of level
coming in to SF. I'd be happy to have a listen to these, please get in
touch off-list.
