Blake, there's a lot of questions in there that are not easy to answer really.
Firstly, the project won't change tempo unless you have a tempo change. If you
have any tempo markers, they will be listed in the marker manager, but you said
you've deleted them, so not sure what's going on. Grid mode will probably only
come into play when using specific markers, again they should be in the marker
manager if you've added any.
You said only the audio track is recording? What is it you're trying to
achieve? You can't record separate tracks at once, unless you want the same
thing recording and those tracks are armed and have the same midi channel. Give
us some more details.
From what I've read on another mailing list, you're objective is to play live
with a certain set up and you're now interested in the Mack and ProTools with
main stage. Depending on what you want would determine the best way for you,
but I don't know exactly what you want. Non of this is easy, but maybe another
DAW would suit you, my guess would be that Logic would help you better, but non
of this is easy and you would still have challenges.

Subject: [vipaudioaccess] Metronome is changing time during recording
Hi all, so when I hit record my metronome will start off at say 100 or whatever
time I have the project set to. Then it will change speed. I’m not sure what I
have done to cause this. I don’t know if I some how inserted another time
signature or what. I deleted all markers from the project and that helped but I
still have some random change in their some how. I was setting ranges so that I
could loop a recording I had done and noticed the problem. Could I have some
setting wrong somewhere? I read through the manual but still no luck as to what
I have done. Would grid mode have anything to do with it? In this project I
have 9 midi tracks and one audio track. Only the audio track is being recorded
