I should receive my U64 in the next two weeks :)
Really excited about it, as I'm really thinking of getting rid of most of
my real C64s to use only this one. I'll just keep my PAL breadbin I think.

As Jérémie said, that's really only for composite.
HDMI is a bit smarter: the display and the device exchange information
(EDID) on their capabilities, and they try to work out the best one
standard supported by both. It would be very annoying if the Ultimate 64
folks had chosen a setting that didn't work with displays worldwide.
