Exactly.  Some general best practices, in my opinion,
are to only use VMWare for underutilized server and
isolated infrastructure roles.

Good for virtualization:

Web Interface/NFuse
Citrix Secure Gateway
Light-traffic Web Servers
TS/CTX license server
CTX Silos <--- light traffic, of course
dev/test
NT servers running legacy apps

Bad for virtualization:

Corporate Mail Server
Enterprise File/Print/Database Servers
Terminal Servers that see heavy traffic

Your mileage may vary.
