w/o checking the advanced concepts guide, I believe
that you'll want to remove MF-XP to remove the server
from the farm, then rename the server and then
reinstall MFXP add it back to the farm.

Basically, follow Citrix's recommended cloning steps
because that's essentially copying and renaming a
server.
