Ok, so do CHFARM ahead of time, before I run sysprep.  Then it will point to
the right database when the IMA is started back up. 
 
I'll still need one image per farm, but I can use an image from farm A to
create the images for farm B.

You can edit the file but that doesn't just move the server to a new farm.
Generally the file is edited when changing the server to point to a replica
of the existing database. IF you have a new farm (different database) you
need to use CHFARM.EXE to move the server from one farm to another so it
properly creates all the entries in the DB for the server.
