You should try it with one app. If your applications already play nicely together and it is a straight migration the benefits are limited. You will gain a more centralized app management, although if you already use imaging for your farm, this benefit is reduced. Best bet is an app that changes frequently, or that you would like to customize in different ways for different user groups (but cannot today). Products with plug-ins are often good in that way - just apply the plug-ins a group needs rather than have everyone have every plug-in under the sun. AIE will not reduce memory usage, it will likely increase memory usage for the same functionality. But don't think I am suggesting that you don't use it. It has tremendous value in what it will allow you to do that you are not doing today (because you couldn't). If you don't play with it you won't realize all the things you do to your users due to inflexibility of the environment.
