I've never actually tried, specifically for favorites - but there's no reason why not. All folder redirection is, is a GPO mechanism for updating certain values in HKCU with other paths. Included in those values is one pertinent to favorites (normally defaults to the folder in the local cache of the profile). This isn't included in the GPO templates, though. All you need to do, is find some mechanism of updating this value (either by scripting, or policy and templates - whichever mechanism you personally prefer), with the values you want. The value most pertinent is:- HKCU\Software\Microsoft\Windows\CurrentVersion\Explorer\User Shell Folders\Favorites The type of value (rather understandably) is REG_EXPAND_SZ. Good form (and you may have problems if doing otherwise) says you should use UNC paths, when this is a remote folder. I script some folder redirection (sometimes the GPO mechanism isn't flexible enough), and have had the odd issue if I haven't updated the corresponding value in:- HKCU\Software\Microsoft\Windows\CurrentVersion\Explorer\Shell Folders (these are all corresponding values but REG_SZs). Don't be fooled that there's any specific magic in the GPOs, per se - all they are, really, are a complex mechanism of applying changes to the registry. If there's actual support in the registry for whatever you want to do, and the appropriate registry keys / values will be actioned by the environment, merely that something is not included in a GPO, does not mean that it's not possible to do.
