I don't know when "Science once said the world was flat" was a scientific
fact, but in 240 BC Eratosthenes calculated the Earth's circumference and
he knew in his calculations an that the Earth was round. It was known from
observations that even though a shadow appeared on a particular water well
on every day, on one particular day, the Summer Solstace, no shadow
appeared.

As for "Science once said the sun orbited the Earth." that continues to be
true, but the protection of the rotation of the sun around the Earth is so
complicated compared with the Earth rotating around the Sun, that it is
thrown out with the adage that the "most simple explanation is probably the
correct one".
An observer standing still at a distance about the same from the sun but
outside of Earth's orbit would see the Earth rotate about the sun.
What that shows is the sad fact that science, if you wish to make things
complicated can prove anything unless you use the "simplest explanation is
usually the truth".
If you read the book "Burning Cold" about the rescue of the Prinsendam, you
would conclude that the Prinsendam never sent out an SOS because the author
says so. However that is not true.
