I'd be interested in whether that program is any better at recognizing music 
when it is mixed with text, as in a music text book.

Hi.
if you search in google "pdf to music" you will find good things.
there is a program called: "pdf to music pro" that opens a pdf sheet
music and exports to XML file. so you can import to Sibelius
comfortablly. just that pdf should be very clear and in order to be
recognized.
