Sarah,
As for multi-bar rests, you can select the range, then use one of the
plug-ins to generate them. I don't remember exactly how we did them in Sib
3, but vaguely recall something in the print dialog for printing separate
parts. That's all different now in Sib 5.
As to printing selected staves, I think you could just hide the staves you
don't want to print and that should do it. Give it a try.

Ok I jut want to print the coral parts not the piano to make it easier for
the choir to read nd count rests. How do I do this in sib 5? I fiind no
extract in the files menu. Is this impossibal, also will it have for example
that thing where it will say the number of rests so that you don't' hae to
count them I remember doing something like that in sib 3.
