Are the discolored tabs ones that would have been used a lot, like tibias,
pressed manually just about every time the organ was played?  If so, the
color may be due to frequent touching/handling...many people play with dirty
hands...many people's skin exudes sweat and other substances that will
discolor some materials.  Are the white keys similarly discolored?
Conversely, if the discolored tabs are ones that were seldom used,
infrequently handled, they may have aged like ivory without benefit of the
polishing constant handling would otherwise provide.  In any event, you
might try a very mild bleach solution on ONE tab...if it works and doesn't
eat the tab or make the discoloration worse, have at it.
