Always fresh chemicals! I make just as much as I need.
I only use a few standard well-published formulas, nothing fancy. One film developer (D-76/ID-11), two paper developers (D-72 and ID-68), one citric stop bath (SB-7), and two self-formulated fixers (acid and alkaline).
