Had a big cooking day yesterday – made mayo then Alabama white sauce then
coleslaw (with the white sauce as a dressing) then pressure cooked a blade
roast with a bbq beef rub, meanwhile made smashed potatoes, then made a gravy
once the meat was ready because the braising liquid was just too delicious to
waste. Yummy lunch! No dessert, but we were stuffed to the gills and didn’t
have another bite to eat all day.
My back was in agony after it all though and I spent the rest of the day lying
down. ☹️
Tomorrow I’m thinking of turning the leftover beef into a stroganoff, probably
with zucchini noodles but I do have some konjac fettucine in the cupboard so
I’ll see what my mood is at the time haha.

I stopped by grocery store on way home…
All the ground beef there was like $4.99-$6.99/lb….
I saw whole sirloin tip roasts on sale for $2.99/lb….
I remembered I had a big meat grinder, so, about to prep everything thing up to
grind most all of that into ground beef. Will make meatsauce out of a bunch of
that, refrigerate or freeze the rest…maybe a meatloaf later in the week.
Gonna cut up and grill eggplant for a kind of lasagna type layered eggplant
parmigiana…
Dammit, just remembered I forgot to get ricotta cheese …
Oh well, I’ll get some in next couple days and do the eggplant thing then.
I’ll spiralize some zucchinis I got too, for “spaghetti “ and meatsauce made
with “zoodles”.
