I've heard 6-row has higher diastatic power (useful for converting adjuncts
or malts with little to no diastatic power) and is a more "authentic"
choice for certain American styles.

I have been having trouble with clarity, too. My most recent 2 batches, I
tried fining with gelatin: 1/2 tsp in 1/4 cup 150 F water. I was not
impressed with my first attempt, but I think the beer was not cold enough
yet. My second attempt, I cold crashed the beer longer before adding the
gelatin. When I transferred to the keg, it was still cloudy. I'm continuing
to chill and carbonate. Hopefully it will clear. On Brulosophy, he didn't
check the clarity until it had been in the keg for about 24 hours and it
had been cold crashed for a couple of days before that. We'll see. I may
need to increase the amount of gelatin I use? I'm hoping I pull a cloudy
pint or two this weekend, then enjoy clearer beer.

Different fining agents act on different components of the beer to improve
clarity. If I recall correctly, Whirlfloc / Irish moss are plant-based and
attract proteins (opposite charge) and pull them out of suspension (some
say this can hurt head formation and retention). Gelatin is animal-based
and attracts yeast out of suspension (again, opposite charge). Then there's
polyclar, which I don't like the sound of because of the microplastics
issue.

Also, my beer has not cleared up (after 4-5 weeks). Someone suggested I
use Irish Moss to help with this. Any thoughts on that matter?
